Romanesco



How beautiful is this vegetable? Fractal Beauty. Math. Art. Food. AND IT TASTES GOOD! BETTER THAN YOU HAVE ANY RIGHT TO EXPECT.

In short, the Roasted Winter Vegetables recipe works equally well if you use the following vegetables instead:

- 3 french radishes from the winter garden, chopped into 1 cm rounds
- 8 brussel sprouts, halved
- 3 leeks, cleaned and sliced into 1 cm rounds
- 1 head of romanesco, cleaned and chopped

Oh fractal broccoli! I actually prefer the taste of regular broccoli (nothing, but nothing, beats broccoli for me!), but I buy fractal broccoli occasionally just for the beauty of it. But don't you find it a bear to cut up? I hate how these little crumbles fall off and then I feel like I am wasting food because I can't catch and eat all the little crumbles.

They grow fractal broccoli up here, too, but unfortunately, it is just regular-sized. Wouldn't it be awesome if they had gigantic fractal broccoli, the way they have giant cabbage?
